Maftoul is Palestinian couscous. Here, it is handmade the traditional way with whole wheat flour from local heirloom wheat. Women Cooperatives run by mothers who make it the same way as they do for their families prepare Canaan’s Maftoul.
Traditionally, Maftoul is prepared with chicken stock, tomato sauce and chickpeas, a favorite winter meal in Palestine. Enjoy its satisfying texture topped with your favorite stew, served as a supplement to rice, or served cold as a salad tossed with fresh herbs and dried fruit.
